Easy Dinner + Dessert in About An Hour!

Hello Friends, Here are 2 recipes I regularly use when I need a delicious meal and dessert ready in a little over an hour with only ~20 minutes hands-on time. The dessert can easily be made vegan and/or soy free  using the suggestions in the recipe. The dinner pie is lact-ovo vegetarian. Enjoy! -Renee

Super Easy  Cheeseburger Dinner Pie

This is adapted from an old Bisquick recipe my husband used to make all the time in our newlywed years.

4 regular Boca burgers, crumbled (or 3/4 bag Boca crumbles)

1 medium onion or 3 cloves garlic, grated

½ TSP sea salt

6 oz. shredded cheddar cheese

1 cup baking mix [or 1 cup unbleached flour + 1 TSP baking powder]

1 ¼ cup soy milk

2 large eggs

  1. Crumble thawed Boca burger or 3/4 bag of Boca crumbles and brown in either onion or garlic.
  2. Spray the dish/pan with cooking spray. Spread browned crumbles in a 9x12 glass dish or a glass pie plate or a muffin pan.
  3. Sprinkle cheese on top (if using muffin pans, the Boca & cheese should be no more than half the muffin cup volume).
  4. Mix other ingredients and pour on top.
  5. Bake 25-30 minutes at 400 degrees.
  6.  A very easy, versatile, kid friendly dish that can be placed in a pie plate and sliced like a pizza/quiche or doubled and placed in a larger glass dish and cut into squares or place in muffin pans for fun on-the-go eating. Great colorful meal when served with a side of steamed green vegetables and fresh fruit.
   Easy Peach Cobbler 
I experimented with 2 other recipes I found online but none of them compare to this simple recipe my aunt showed me in my grandma’s old, old falling-apart recipe book. Great with fresh or canned peaches. A great way to use some excess fresh peaches that do not taste the best. My mother hates cooked fruit but she loves this peach cobbler recipe! Enjoy.

 2 cups fresh peaches (or 2 cans peaches in 100% fruit juice, sliced & drained)
1 stick butter or 1 vegan Earth Balance stick

1 cup unbleached flour

2 TSP baking powder

1 cup soy or coconut milk

2 cups raw sugar
( or agave nectar)
9x12 glass baking dish
  1. Set oven to 350 degrees
  2.  Prepare peaches with 1 cup sugar  or 3/4 cup agave nectar and set aside in a bowl.
  3. Put butter or Earth Balance stick in the baking dish to melt in the oven.
  4.  Stir up batter of 1 cup sugar (or 3/4 cup agave nectar), flour, baking powder, salt and milk.
  5. Pour batter over melted butter
  6. Spread sweetened peaches on top.
  7. Bake for 50 min to 1 hour.
  8. Serve warm for a comforting, delicious treat.

Natural Allergy & Flu Relief PLUS a coupon

  Hello Friends,
Those of you that know me know I have always had seasonal allergies and super super sensitive skin. Each month between February and September, I spend hundreds (yes hundreds) of dollars each month in prescription and non-prescription allergy medicines for me and my kids. This year, I found some new less expensive weapons in my allergy war arsenal.
Those concerned and interested in a natural flu remedy, please see #5. I chose this product based on the scientific data readily available, the excellent company reputation  and the fact that it is widely available. Many people, especially those of us living in small towns, do not have access to natural food stores. I like to present products that are more readily available and affordable.

1. Simply Saline Nasal Mist. Small nozzle so great for the kids with just the right amount of pressure to get you breathing easier again. Self seals to reduce contamination. Simply Saline Cold Formula with menthol (green bottle) is a great alternative to nasal sprays when you are still congested, but have reached the 3 day limit. [Extended use of nasal sprays results in a horrible phenomenon called rebound congestion in which further use of nasal spray no longer allows you to breathe and you must wait another 1-2 days before using it again for relief! I have experienced it and let me tell you that rebound congestion is 5 times worse than your worst congestion. I did not think it was possible but it is true.] I still love my Flonase and Rhinocort for the kids for daily allergy control, but when a cold or unexpected perfume challenge hits, this stuff works. 2. Local raw honey from within 50 miles of  your location. Take a teaspoon each morning or night. Easy to get the kids to take their "medicine". Works on the same principle as allergy shots which involves  exposing yourself to small amounts of pollen specific to your area so that your body can adjust and not overreact in the future. An allergic reaction is simply your immune system overreacting to non-harmful substances such as pollen. Available at your local natural foods store. If you live near the NC mountains, Food Lion sells a big glass jar of raw honey from the NC mountains.

3. Boiron homeopathic Sabadil allergy medicine. I LOVE THIS STUFF SO MUCH I COULD MARRY IT!!! While I have not investigated why or how it works, all I can say is it is amazing and works. It does not work for me for my skin reactions to pollen & grass, but it is surprisingly effective for the respiratory and eye reactions. Safe for those ages 6 and up. My son asks for it now because he feels so much better. It dissolves on your tongue so no water is needed. It tastes neither good nor bad and the dissolving tablets make it fun for kids to take. Available at Whole Foods (~$14), CVS Pharmacy (<$10) and other natural food markets.

While I  have not investigated why or how it works, all I can say is it is amazing, it works and I am in love! I had nothing to loose one day when I did not have time to sign my life away to buy some real Sudafed (pseudoephedrine), but was going on my 3rd day of sinus congestion/migraine misery. Worked in 7 minutes! I took another dose 2 hours later and was pain and congestion free for another 4 days!!! Safe for those ages  6 and up. My son asks for it even though none of us can correctly pronounce it. It dissolves on your tongue so no water is needed. It tastes neither good nor bad and the dissolving tablets make it fun for kids to take. Available at Whole Foods (~$14), CVS Pharmacy (<$10) and other natural food markets.

5. Boiron Oscillococcinum Flu remedy. I have not personally used the product as I have the others listed above so I am not sure of the effectiveness. I just wanted to present an alternative to antiviral medications and flu shots for those looking for a more natural option. They also have a children's version.  Available at Whole Foods, CVS, Wal-mart. If you see it at another national store, let me know so I can share the information with others.

A REAL 30 minute, $10 meal

This is my favorite quick meal when my commute from work is longer than usual and I am assaulted at the door with " Mommy I am soooo hungry, when's dinner going to be ready?". I made this up one day when I needed a quick item to take to church potluck.   Enjoy.

Renee's Italian Pasta Bake- a real 30 minute, $10 meal
2 Lightlife Foods Italian Style Sausage veggie links* (comes as a pack of 4, refrigerated)
1 box whole grain rotini pasta ( I like Barilla, Heartland, Ronzoni Smart Taste)
1 bag steam vegetables, Italian style or baby broccoli
1 jar spaghetti sauce
1 8 oz. package Italian blend cheese, shredded
1 clove garlic, grated

1. Cook pasta according to package instructions (usually 8-12 min).
2. Cook microwave steam vegetables according to package directions (usually 6-7 min.).
3. Drain cooked pasta and pour into a 13x9 dish. Stir in Italian cheese into hot pasta.
4. Pour jar of spaghetti sauce over pasta and cheese and stir.
5. Add fresh clove of grated garlic and stir again.
6. Slice 2 of the 4 Lightlife Italian sausage and stir into mixture.
7. Add the steamed vegetables to mixture and stir. Place in oven for 6-8 minutes on 400 degrees while you set the table. ALTERNATELY, you can serve the steamed vegetables as a side dish.
8. This is great served with fresh bread or cornbread if you have some leftover. Serves 4-8 depending on how hungry you are at the time. YUMMY!! My kids had seconds and wanted the leftovers for breakfast.

* Remember Lightlife Foods does NOT use genetically modified soybeans in their products, unlike many other mainstream meat analogs. You can substitute 2 Boca Italian vegetarian sausages that are thawed a bit (it comes frozen) for this recipe. DO NOT use Morningstar Farms Italian Sausage as it has a crumb-like mushy consistency and does not taste nearly as good as the ones by Boca or Lightlife Foods in my family's opinion.

Amazing Dip recipe

 I was inspired by this recipe for black bean sweet potato burritos I saw on VegRecipes.org Courtesy of Sarah Kramer, author of How it All Vegan!, The Garden of Vegan, and La Dolce Vegan.
 I found I was not fond of it as burritos as it was too mushy feeling in my mouth for my tastes, even when baked in the oven. But as a dip served with baked Tostitos Scoops-WOW!!! Serve this for a different, delicious, low-fat, yummy filling dip and enjoy!! Super easy and yummy- a winning combination. Enjoy!

Black Bean Sweet Potato Dip

2 medium sweet potatoes, diced
1 tablespoons olive oil
1 15.5 oz. can black beans, drained and rinsed
1 cup vegetable or chicken flavored stock
½ cup water
2 garlic cloves, minced
1.5 TBSP chili powder
2 TSP ground mustard
1 TSP ground cumin
1/2 TSP sea salt
1 cup salsa
1 cup shredded cheese or grated vegan "cheese"
Baked Tostitos Scoops or other baked tortilla chips
1. In a large pot of salted water, boil the sweet potatoes.

2. While the sweet potatoes are cooking, in a medium saucepan on medium heat, add the black beans, stock, water, garlic, chili powder, mustard, cumin and sea salt.

3. Simmer, uncovered, over medium-high heat for 15 minutes.
4. Drain the water from the sweet potatoes; return the sweet potatoes to the pot. Set aside.
5. Once the bean mixture is done, drain and add to the sweet potatoes. Mash with a potato masher.

6. When ready to serve: add equal amounts of the sweet potatoes/black beans, salsa and cheese to a glass bowl.

7. Microwave 1 minute or warm in the oven for 5 minutes. Serve immediately with baked Tostitos Scoops chips or some other baked tortilla chips. Too good and filling for words!

Hello Friends,
 Welcome new Take Back Tour friends! I pray those of you that were blessed to join us at our 5th annual Wellness Walk on May 2, 2009 enjoyed yourselves as much as I did. We proved yet again that healthy eating can taste GREAT and make you feel good and be affordable. It was great to meet you in person and see new friends as well. Now you see that my comments about my big mouth are not exaggerations!!! (smile). For those of you that could not make it- sorry but you missed a great time and a lot of great free stuff. I am slowly but surely adding photos of the event to the website so check back in a few days. Stay tuned for more freebies and recipes this week (I love free stuff!) and useful information to help you TAKE BACK YOUR HEALTH!

 A bit about the Wellness Walks
Each year in the spring, in lieu of regular church services, we go to the [Joe Davidson] Park shelter and set up tables with health information and vegan and vegetarian food and begin with a brisk fun walk. We had 135 people in attendance this year from 30, 50 and 100 miles away of all races and ages! WOW!
The themes of our tables included the Take Back Tour Health Ministry subjects of 2008 with displays on: Natural Sweeteners, No Fake Foods Kids healthy snacking, Beauty Secrets of the Bible/Natural Beauty, Safe Home, Coupons/Recipes, Evangelism, healthy drinks tasting (almond milk, soy milk , Fizz Ed).
-Our menu included biscuits made with Light-life Foods Gimme Lean sausage, vegan calico beans, vegan and vegetarian oatmeal burgers, almonds, pecans, cashews, raisins, Philippine brand dried mangoes, Kashi TLC bars, strawberries, grapes, apples, bananas, water.
-We gave away prizes to promote health including grocery store gift cards, a Magic Bullet juicer, the Green Pan cookware, crock pot, natural beauty items such as raw honey, vegan soap, essential oils, olive oil, almond oil, and natural snack gifts items to help resist junk food temptation. Our kid gifts included a soccer ball, stainless steel thermos for kids, jump ropes, Subway gift card, and healthy snack items. CONGRADULATIONS to all our winners!
