Those of you that know me personally, know how super excited I get when I find something great and inexpensive. So I hope you feel my excitement in this post. I LOVE simple recipes for how to make homemade items instead of purchasing expensive non-GMO/organic commercial brands. However, since time is my least available commodity in life, I love finding the healthiest alternative that still allows me my sanity and time to actually sit down for 5 minutes when I get home from work. Someone recently asked me about smoothies and flax seed and mentioned the use of almond milk. Well I had been a frequent user of shelf stable almond milk for years for baking. Recent articles about the fillers such as carrageenan (a seaweed extract) that causes sensitivity in some people and reports of low almond content of some commercial almond milk brands makes me more leery about recommending its use as a dairy substitute. For the past 2 years until now my favorite go-to milk has been coconut milk -which is awesome in everything from pancakes and cornbread to puddings and smoothies. In ancient times, plain almonds were a shelf stable way to make almond milk as needed while traveling long distances. I ran across this post about how to make a simple natural almond milk in just 3 minutes! I adjusted this recipe to use Justin all natural non-GMO brand almond butter packets which can be found for ~$1-1.25 each in stores such as Whole Foods, Super Target, Walmart Supercenter and other grocery stores. This is a great way to make almond milk for use on the go or when only a small amount is needed. -1.5 oz. packet or 2 TBSP Almond Butter (original, vanilla, honey, chocolate) -agave nectar, honey or other natural sweetener to your taste -1-1.5 cups water Add to glass bottle, cap and shake until mixed well. Strain if you like a smoother texture and enjoy in smoothies or for baking. THAT’S IT!!
