Here is one of my favorite tofu recipes I use when letting people taste tofu for the first time.

Renee’s Italian Tofu
8oz extra firm tofu
Italian breadcrumbs
Reduced sodium teriyaki sauce
Olive oil

  1. Slice extra firm tofu into 1-2cm thick pieces.
  2. Lay in a single layer on a pan. Pour reduced sodium teriyaki sauce on top and marinate in the fridge overnight
  3. Remove the marinated tofu and place between a towel to blot out the moisture. Press firmly to compact the tofu into a denser piece. You may then place the strips in the freezer for 30-60minutes to make the next part easier.
  4. Batter the blotted, pressed tofu in Italian breadcrumbs.
  5. Place in a pan coated with olive oil and brown lightly or place on an olive oil coated pan and bake in the oven until browned.
  6. Serve over whole grain pasta and spaghetti sauce. This is a great way to introduce tofu in a way the whole family will be willing to try.

    Renee is a married mother of 2 with a Ph.D. in Nutrition Science. Renee currently serves as   Senior Manager of Technical Operations for Zen-Bio, Inc located in Durham North Carolina. Renee is also the Health Ministries Leader for Philadelphia Seventh Day Adventist Church in Burlington, NC, Renee was one of the coordinators of the first community diabetes programs in North Carolina.  Renee continues to help coordinate church-based community health programs in North Carolina and surrounding areas to educate and empower others to improve their health.
